Spruce up your lunchtime salad with eggs & avocado drizzled with a burst of lemon.
Serves 2
Ingredients
2 cups fresh endive lettuce
2 cups fresh basil leaves, small or chopped
4 hard-boiled eggs, sliced
1 large or 2 small avocados, chopped
1/2 cup red onion, thinly sliced
Dressing
1/2 tsp. finely grated lemon zest
2 Tbsp. lemon juice
1 tsp. honey
1/2 tsp. Dijon mustard
1/4 tsp. fine sea salt, or to taste
3 tablespoons extra-virgin olive oil
Freshly ground black pepper to taste
Instructions
Add all ingredients for dressing into a small bowl.
Whisk until well blended and set aside.
Place lettuce, basil, onion, eggs, and avocado into a bowl.
Top with dressing and toss lightly.
Serve immediately.
