Spring Avocado Egg Salad with Lemon Dressing

Serves 2

Ingredients

  • 2 cups fresh endive lettuce

  • 2 cups fresh basil leaves, small or chopped

  • 4 hard-boiled eggs, sliced

  • 1 large or 2 small avocados, chopped

  • 1/2 cup red onion, thinly sliced

Dressing

  • 1/2 tsp. finely grated lemon zest

  • 2 Tbsp. lemon juice

  • 1 tsp. honey

  • 1/2 tsp. Dijon mustard

  • 1/4 tsp. fine sea salt, or to taste

  • 3 tablespoons extra-virgin olive oil

  • Freshly ground black pepper to taste

Instructions

  1. Add all ingredients for dressing into a small bowl.

  2. Whisk until well blended and set aside.

  3. Place lettuce, basil, onion, eggs, and avocado into a bowl.

  4. Top with dressing and toss lightly.

  5. Serve immediately.
