Whether for Easter or just a healthy appetizer, these vertical eggs are the perfect line up for any spring party or event.

Ingredients
6 hard-boiled eggs, peeled
1 large or 2 small avocados, cubed
1 Tbsp. Dijon mustard
2 Tbsp. low-fat mayo or plain Greek yogurt
1 Tbsp. lime juice
1/4 cup green onions, finely diced
4 slices of crispy turkey or soy bacon, cut into thin strips
Pinch of garlic powder, salt and pepper
Sprinkle with paprika, optional
Instructions
Slice off the top 1/3 of each hard-boiled egg and scoop out yolks into a bowl.
Set egg whites aside.
Mash yolks and avocado with a fork, mix in lime juice.
Add mustard, mayo or yogurt, green onion, garlic powder, and the salt and pepper.
Scoop mixture into each vertical egg white cup.
Top mixture with bacon strips, replace the top of the egg and garnish with green onion.
Serve immediately or chilled up to 6 hours.
